Grandma's Old-Fashioned Chocolate Cake With Chocolate Icing

When I was growing up as a small child, I always looked forward to the homemade chocolate cakes that my grandmother would make for my Birthday. In our family, my grandmother was a dedicated baker and would bake something for us every day. Thankfully, she passed on her love for baking to me.

This recipe is done the old-fashioned way and is topped off with some delicious chocolate icing. Once your cake is cooled, you will want to store it in a cake container. If it's hot and humid outside, I recommend storing it in the refrigerator.

Cake Ingredients:

1/2 pound butter, softened
5 eggs
2 cups granulated sugar
3 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 teaspoons vanilla extract
1/4 cup evaporated canned milk

Preheat oven to 350 degrees.

In a large mixing bowl, cream together the softened butter and granulated sugar. Slowly add in the eggs, one at a time, beating after each addition.

In a medium-sized mixing bowl, combine the all-purpose flour, baking powder and salt. Slowly add 1/2 of the flour mixture to the wet ingredients and beat for 1 minute. Pour in the 1/2 cup of milk and beat again, followed by the remaining flour mixture. Stir in the vanilla extract and beat again. Finally, stir in the 1/4 cup of evaporated milk and beat until all ingredients are well combined.

Note: If your batter seems really stiff, add a little additional milk.

Lightly spray a 9 x 13" baking dish with nonstick cooking spray. Pour the batter into the pan. Bake in a 350 degree oven for 35 to 45 minutes or until cake is done in the center. Cool cake on a wire rack.

Chocolate Icing Ingredients:

2 1/2 squares baking chocolate
2 cups granulated sugar
1/2 cup evaporated milk
1 teaspoon butter, softened
1 teaspoon vanilla extract

In a large saucepan, melt the baking chocolate over low heat. Stir in the granulated sugar and evaporated milk. Bring to a boil and boil for 2 to 3 minutes or until a soft ball forms when dropped into cold water. Remove pan from heat and stir in the butter and vanilla extract. Beat icing by hand until it is thick enough to spread on your cooled cake.

These vocal groups were covered historically in issue # 45. By 1945 the members of the group were Theron Hill, Norman Thrasher, Willie Jones, Ted Green, and Noah Howell. The first mention of the Royal Jokers comes in November of 1954 from their manager Chuck Darwin who has them recording for Venus Records in the motor city. That month Venus # 103 is released featuring the Royal Jokers on the songs "Someday We'll Meet Again" and "I Want You To Be My Baby". This record remains an obscurity as it does not make any appreciable inroads on the R & B sales charts. In May of 1955 it is announced that the group will be recording for Atlantic Records in the near future. In July of 1955 it is written in the trade press that The Royal Jokers will record for a new Atlantic subsidiary label to be called Atlas Records. During the summer the execs at Atlantic realized the existence of a R & B record label called Atlas, and so the new label will be called Atco (ATlantic COmpany). Dodge City was founded in 1872. It quickly became the world's largest shipping point for Longhorn cattle. Dodge City is known as one of "the wildest" of the early frontier towns. Law and order was established with the help of Bat Masterson, Wyatt Earp and Bill Tilghman.

The cattle industry is still vital to the town's economy. As Dodge City grew, the "wild west" slowly disappeared. The cattle drives stopped in 1885, however, this period in Dodge City's history gave the town international fame. You can relive this period of history while visiting the Boot Hill Museum and Front Street in Dodge City, Kansas.

The exhibits throughout the museum imitate life in early Dodge City. Their collection contains over 200 original guns, a working print shop, an extensive collection of drug store items and many other exhibits. All artifacts on display are authentic. There are approximately 20,000 artifacts displayed.

Admission prices:

Summer: Adults $8.00, seniors $7.50, students $7.50, families $25.00, children age six and under is FREE

Off-season: Adults $7.00, seniors $6.50, students $6.50, families $20.00, children age six and under is FREE.

Activities include:

o The Long Branch Variety Show is the longest running theater production of its kind in Kansas. It is a 1880s styled show suitable for family audiences.

o Chuck wagon dinners: Nightly at 6:00, adults for $10.95, kids 6 and under $6.95 plus the sales tax in summer season only. Dinner and the variety show tickets are available. The chuck wagon dinner is served in the Occident Saloon.

o Stagecoach rides: The stage leaves approximately every 15 minutes for a Dodge City downtown tour in a real horse-drawn stagecoach. Hours are daily 9:30 a.m. to 6:00 p.m. Cost is $5.00 per person in the summer season only.

Boot Hill Museum Exhibits:

o People of the Plains: This exhibit is housed in the original Boot Hill Museum building. It tells the story of the people who have lived on the plains featuring the Nomadic Indians of the Great Plains, The Railroad, The American Buffalo, The Era of the Cowboy, and Victorian Fashion. Children enjoy "Stan," the talking steer. Stan tells about the cattle drives from Texas. In this same building is an exhibit dedicated to Dodge City in the movies and on television.

o Beeson Gallery: Is a wide variety of displays about commercial businesses such as the Bank, Undertaker, Jail, Mueller's Boot Shop, Dr. McCarty's office and Drug Store, and Zimmerman's hardware. In this gallery there are dry goods and a print shop where you can have posters made the old fashioned way.

o Long Branch Saloon: The Long Branch Saloon was the most popular, refined meeting place of cattlemen. Walk through the doors of the Long Branch Saloon to experience an era of the past in Dodge City, Kansas.

o Guns That Won the West: Display of firearms used in the harsh reality of the brutal, lawless and expansive Wild West frontier.

o Hardesty House: Mayor A.B. Webster of Dodge City built this house in 1879 and later sold it to Richard and Margaret Hardesty after they married. This is a typical home of the 1880's with interior reflecting the middle-class lifestyle of Victorian Kansas.

o Boot Hill Cemetery: Is the final resting place of buffalo hunters, drifters and others who had no money and no family in Dodge City, Kansas area.

o Saratoga Saloon: This saloon offered billiards, keno, faro and other games for soldiers from Fort Dodge to drink and play without fear of attracting the brawling elements from other visitors in town. There were 16 saloons in Dodge City, however, the Saratoga and the Long Branch Saloons are two noted for being the most peaceful. I suppose you could say this is where the "good guys" gathered to drink, relax and play games.

o Santa Fe Trail Tracks: This site is certified by the National Parks Service and is located nine miles west of town on US Highway 50. The site preserves one of the finest remnants of wagon tracks in existence along the entire trail. An easily accessible walkway and interpretive signs allows visitors to experience the Trail first hand.

The Kansas Cowboy Hall of Fame, a project of Boot Hill Museum, was developed to preserve and honor the life of the Kansas cowboy. There are five inductees per year honored for their outstanding contributions to the western lifestyle.

In the old western days of Dodge City, Kansas, the Long Branch Saloon served milk, tea, lemonade, Sarsaparilla and all types of alcohol including champagne. Anheuser-Busch was the original beer served. They kept their drinks cold in the winter from ice that came from the river. In the summer, it was shipped out on the train from the mountains in Colorado. Today, you can enjoy drinks at the bar of the Long Branch Saloon and order ice cold Budweiser beer or a sarsaparilla bottled especially for the museum with their own label.

The old wild west was no place for the timid or the weak. The men who conquered the west were the outlaws, the lawman, the gambler, the buffalo hunter and the frontiersman. These were the men who earned reputations that inspired the era of legends that continues today for all to know and enjoy.

The firearms display in the Boot Hill Museum tells the story of the man who used the firearm in his quest for freedom, food, financial gain, protection and, of course, not always in the pursuit of something good. There are flint lock muskets and pistols, as well as a collection of commemorative guns donated to the museum by recent citizens of Dodge City, Kansas. Included also is a collection of Winchester firearms, and a rare Winchester advertisement board in mint condition.

Other exhibits about the Buffalo Hunter include many items he may have used such as Sharps Rifles and a rifle belonging to Prairie Dog Dave Morrow, a man known to have shot the white buffalo and later sold to Charles Rath for $1,000.00. You will find a case dedicated to the Gambler of the time that includes an authentic Keno goose from the Long Branch Saloon and many pocket pistols, derringers, and belly guns. Belly guns were the weapons of choice for the gambler.

You will fine on display numerous guns, authentic badges, and other times the Lawman used in Dodge City, Kansas. There is a gun on display believed to have belonged to Bill Tilghman and one that perhaps belonged to Bat Masterson.

The center of the firearms exhibit features real history, a firearm that belonged to Ben Thompson. His brother, Billy (not sure if this was Billy the Kid) used it to shoot the Sheriff of Ellsworth, Kansas. Just right around the corner of this display is a lawman and an outlaw in a 'Shoot-out' on Front Street. The diorama here depicts Dodge City in 1878 having train tracks in the background and looking as if they just stepped out of the Long Branch Saloon. There is a rifle here believed to have belonged to a member of the Dalton gang.

And besides, you'd be awake enough to enjoy the whole ATV tour that way. And of course, eat well too. You'll need all the energy you can muster to ride your ATV during the tour. And you'll have kids and youth to keep an eye on too! Before I forget.... WATER . Hydrate yourself.

Clothing wise, don't forget the helmet and the ATV protective gear (of course, duh!) and also what you might forget is an extra change of clothes. Bring A FEW extras, in fact. If you don't relish wearing caked-up mud clothing days on end (especially if the ATV tour with your kids and youth takes days) and smell like you've been in the dump. Clothes will get extremely dirty during the ATV tour with your kids and youth. Of course, don't forget to bring comfortable shoes for your kids too - nothing worse than having to endure the whole ATV tour wearing squishy shoes.

Water-based sunblock is a must for my kids because when they ride their ATVs out in the sun for some time, they get really bad sunburns when they come back. And if there's one ATV tour trip advice I got, it's not to bring anything glass during the trip! One, the kids or your youth might break it. Two, ATV riding can get a little rough and it could break the glass.

Most of the ATV tour trips have restrooms where you and the kids and youth can answer nature's call. And in case, they don't have restrooms or if the kids can't hold it in any longer, pocket tissues (wet ones would be good) might come in handy.

The Renaissance of Richmond, Virginia

Richmond, Virginia is VERY easy to love.

We are often pleasantly surprised and rarely disappointed by places in the world where we travel. However, our return to the historic Richmond, Virginia area completely overwhelmed us all. Our team enthusiasm was echoed by the group who had accompanied us.

For four days, we witnessed first hand the vibrant vibe that is the renaissance of Richmond first hand for over a week. It was only enough time to know that we cannot wait to return to experience more history, art, food and wine.

We all were fortunate to participate in a private tour of the Virginia Museum of Fine Arts (it will reopen in the spring of 2010). The Special Collections area at the Library of Virginia provided us a rare look at some of George Washington's original documents, along with original works by Patrick Henry. As the curator captivated us with numerous original works of our Founding Fathers, he provided a sense of their lives and their commitment to life, liberty and the pursuit of happiness. You can make arrangements to see items in the Special Collections with an advance appointment.

A catered luncheon at the Edgar Allen Poe Museum and tour was interesting-especially with 2009 being the 200th year celebration of his life. We also visited St. Paul's Church, famous for Patrick Henry's "Give me liberty or give me death" speech in 1775.

These are only a few places in Richmond's history.

We also found time to drink wine at Can Can, dine at the Hanover Tavern and experience the farmers market in Shockoe Bottom. We enjoyed a cooking class at DoubleTree, where there was a focuses on local Virginia favorites and local wine. Next, a special dinner at the cooking school, Mise en Place, with local purveyors and farmers, was a special treats for our culinary team. Everything Misen en Place presented was fresh, easy and delicious and so was the company.

We even met Buz, of Buz and Ned's fame, by his real, green-wood smoke pit. The flamboyant Buz had slayed Bobby Flay in the barbecue competition, the Food Network's Throw-down.

A big delight to many to wine writers was the many new and state-of the-art vineyards and wineries popping up in the greater Richmond region. One taste of the sparkling, whites and reds and we understood the reasons for the local wine popularity.

Even after a whirl wind time of l5 hour days our team did not want to leave. We even called airlines in hopes that we were bumped.

We were fortunate to have stayed in two of Richmond's historic properties. First, we loved the quaint, old world feeling of the Linden Row Inn, a true inn in the heart of town. This establishment was like being at home with a tea and coffee room in the parlor, spacious rooms, topped of by a warm and friendly staff. Its amiable manager welcomed us in person with hot tea in the secluded court yard terrace. The next day, he gave us a behind the scenes peak at the renovated suites and fascinating history of the Linden Row Inn.

The historic Jefferson Inn, an American Landmark since l895, was without any doubt one of the finest hotels we have experienced anywhere in the world. This 5 star and 5 diamond hotel's renowned true southern hospitality will be featured in depth in several upcoming articles.

On our last evening, we enjoyed the ambiance of the historic river district. We sadly bid a fine farewell, not good by, to the Richmond area at a very special spot called Julep's, noted for 40 years of old fashioned warmth and new southern cuisine.

One of the beauties of the Richmond historic triangle is ease of transportation. It is a short hop off route 95 when driving, and then picturesque and easy roads help you find your way.

We came by train, plane and rented car. We loved the train, the airport was a modern joy, and Enterprise picked us up with a few minutes notice, on time, at our hotel. Yet, no car was needed to get around in Richmond. Some rode the self balancing Segways all over town one afternoon, while others walked miles to discover vintage shops and other hidden treasures in Carytown. Others visited the Virginia Historical Society. By all of us going different directions, we discovered why we need to return.

In recent times the Australian Government has produced and promoted tourism in Australia and abroad with some success. Publications with the intention to encourage tourism are widely available and are distributed all around Australia.

An important economical activity of Broken Hill since the late 1980s and 1990s is tourism. The tourism booklet "Broken Hill: The Accessible Outback" is attempting to encourage visitors into the area. Broken Hill is located in New South Wales close to the South Australian border. The book informs readers about activities tourists may like to do when visiting the town. The town boasts 26 heritage buildings listed by the National Trust all built between 1890 & 1892.

The temperature in the interior of Australia during January are around 38 degrees Centigrade or 100 degrees Fahrenheit. Broken Hill is a hot arid place. After reading the tourism booklet, the reader would assume that this town is an isolated Australian town. Most of the graphics in the booklet have scenery of the Australian desert pretty typical of the place. The pictures of the Australian desert are genuine but only a photo will not represent and describe the heat that is felt by everyone. As indicated travelers of the outback experience mental, physical, and spiritual isolation which makes life almost intolerable, especially for women and children. Study shows the Australian summer will take some newcomers aback. The weather in this town fits the image of a typical inland Australian country town.

An observation is that Broken Hill was once much more populated that its current population of 21,000. The information in the booklet achieves its objectives to entice tourists to visit the town. This is done through the quality of the materials used and the relevance of the information. The book encourages tourists to 'confront vast space' which addresses the issue of remoteness. The target audience for this booklet is both interstate, intrastate and international tourists.

The most famous is the Milford Track, with several other well known tramps ( the New Zealand term for hiking) in the same area -Greenstone, Routeburn, and in the northern part of the South Island the Heaphy Track. In the North Island, the most popular day walk some suggest in the world , certainly the Southern Hemisphere, is the Tongariro Alpine Crossing. This 17 kilometre trek is in Lord of the Rings territory or Mt Doom!

Miscellaneous

Personally, I would not have said New Zealand was a natural for sports such as cycling. We have a lot of hills! But those who are keen, give it a go. There are many wonderful mountain biking locations. Camping, is very well catered for. Our beautifully situated golf courses attract golfers from around the world. Trout fishing, and deep sea fishing are other activities, that bring people from far and wide. The rich and famous find they can escape into the wilderness, here Down Under and often slip in and out quietly, for a break from their high profile lives.

Culture

If culture is more your thing, we have plenty to keep you intrigued. The traditional Maori culture and lifestyle, is a unique experience. They came in their canoes from Hawaiiki over 800 years ago. Rotorua, with its thermal geysers, mud pools and fascinating scenery, is the best single town to embrace all things Maori. Most traditional Maori culture is found in the North Island, where the majority lived.

History

Our historic centre is found at Waitangi in Northland. It was here New Zealand's founding document, the Treaty of Waitangi, was signed in 1840.New Zealand history being relatively new. Our "old" buildings are the cause of some amusement to visitors from Europe and countries where old, is older than even New Zealand when the Maori first arrived!

Museums and Art Galleries

Museums and Art and Craft Galleries are scattered around the country. New Zealander's are creative and innovative people. Perhaps this sprang from the pioneer spirit, or perhaps from our isolation. But we do many things a little differently. Which is why our fashion designers, have become well known internationally for the originality. Te Papa in Wellington is the official National Museum. The Auckland War Memorial Museum is also an excellent more traditional, museum. Maritime museums, kauri museums, technology museums, car museums - they are many, and varied, featuring different aspects of New Zealand history.

Gardens

New Zealander's love their gardens and there are many open to the public. Ranging from tropical gardens in the north to cooler climate gardens with glorious spring flowers, there is real variety. In part due to the climatic and soil variations. In spring and summer there are many annual garden tours.

Wine and Food

If you are looking for internationally acclaimed wines, New Zealand has those too. We are fortunate , with such a variable climate and soils, to have many wine areas, each tending to specialise in varieties best suited to the area. With over 400 wineries, the choices are numerous. Many New Zealand wineries also have excellent restaurants. Food and Wine - what a holiday! And I can promise, once you have become hooked on New Zealand coffee, you will suffer withdrawal symptons when you go home!

Music

New Zealand has excellent music and our local productions, and concerts are well worth experiencing. Not only are there the more traditional concert venues, but many outdoor concerts are held in vineyards, parks, and gardens. Some are sponsored by local councils and free. If you are here at the right time you may enjoy a great New Zealand musical event. Auckland has several big free concerts over the summer, where up to 200.000 people attend. So check at the Tourist Information Centres.
